Harvest method: Manual in small boxes
Wine process: Novello wine is produced with the carbonic maceration of grapes which are first picked up in small boxes and then put in an anaerobic place (without oxygene saturated with carbon dioxine) Grapes are kept for 10 days and then are pressed in order to ferment at balanced temperature. This method underlines flavours and tastes of mature grapes. After this alcoholic fermentation, wine is stabilized, filtered and refrigerated, sterilized with some membrane filter and cold blotted
Organoleptic notes: Light red with violet shades, strong taste and fruit scent, delicate and cool taste
Gastronomic mating: Excellent with all, also without meal
Alcohol content: 12,5% vol.
